Best of Marin

Marin Magazine listed us along with many other great establishments in their 'Best of the County' list. Another accomplishment for one of the best hard working teams out there. Congratulations everyone! A big thank you to our Fairfax community and all those wonderful guests we have that make their way into Fairfax each night.

Monday Night Popups

The Trifecta are back!

The trifecta are three of our chefs (Lai, Ryan and Jason) who helped open up Village Sake. We are letting them take over the kitchen for the next two Mondays to offer up a different menu experience at Village Sake. The last time they did their pop up we sold out by 8:00pm.

They will be taking over our kitchen again on the next two Mondays. (July 11th & 18th at 5:00pm)

Hamachi Tacos
and more...

Waitlist Changes

We are constantly striving to make our waitlist process as fair and simple as possible. It’s a tough challenge to meet everyone’s needs and expectations while ensuring we do not have empty tables while so many are waiting to get a table.

We had recently added the “request your time” feature to help make getting a table at a time closer to your needs. This worked some of the time, but most of the time the requested time was before the length of the wait, or as usual, everyone requested 7:00pm and we only disappointed many of the guests who requested 7:00pm. It also left many tables empty from 6-7pm.

We are going to simplify things and move to a “in line” standard list starting today. You may still say in the notes “I cannot get there before 6:00pm” for example and we will skip over you until then. We will no longer be sending out estimated wait times. You can see online where you are in line and call us for estimates. When we quoted times online, we would quickly get up to 2-3 hour quotes on busy nights based on the number of sign ups. The problem with this is many people would get a two hour quote, have no intention on waiting that long, and not cancel, leaving us to over quote times. The longer than actual quote times left many not bothering to sign in.

We will also begin taking names for the list earlier at 5:00pm starting on Monday.

On another note to share, besides on the weekends, the crazy lines before opening have really trimmed down. Monday, Wednesday and Thursdays are much easier to walk in now outside of the 7-8pm times.

We are often asked why we do not take reservations. Since we only have 12 tables and everyone wants to book 7:00pm, we feel this will limit our ability to serve as many guests as we do each night. It will also take away any chance for a spontaneous visit.  We do not want to be a place that you have to book out a month in advance to dine here.

We sincerely thank everyone from the bottoms of our hearts for all the support and patience as we continue to learn how to best operate. We have the best community to be a part of.

Thank you,

The Village Sake team.

Another Great Review From the Marin IJ

"Whitman is an accomplished chef, having won a Michelin star in 2007 and 2008, cooked at the acclaimed James Beard House and led kitchens in Hawaii, the Caribbean and Japan..... His new venture with Porter is definitely causing a buzz around the county and the lines out the door can attest to the well-deserved popularity that Village Sake is enjoying."
"Each dish came out looking like a jewel with beautiful presentations, lively garnishes and just enough sauce or condiment to embellish and accentuate the main ingredient."

Our Chronicle Review is out. Three Stars!

We are very proud and excited for our team for garnering such a great review from Michael Bauer in the San Francisco Chronicle

"From start to finish you can see the professionalism in the decor, service and the food. It’s a restaurant that not only fills a need in Marin, but one that would lure me across the bridge for the nigiri, hamachi collar and those kimchi Brussels sprouts."

We are open!

Well, we did it! We opened our doors to the public Thursday night, August 27th, to a line of people waiting outside. It was very exciting (and scary) to see how many people wanted to give us a try on our very first night. It was hard, but we got through it. Thank you for your patience as we found our footing. Our second night saw the same line out front prior to opening. (we haven't even hung up our sign!) A much smoother shift with a lot of great guests.

A very big thank you to all of our supporters through Kickstarter, contractors, vendors, friends, family and staff for making it happen.

Togo Orders?

We've been asked about if we are going to do togo food, we will, but we need to first get practiced enough serving our in house guests before adding more orders into the kitchen. Stay tuned and we will announce that down the road.

Reservations? Why not?

Currently we are holding off on reservations. This is a decision we made for now that we think will benefit all. True, you may have to get on a wait list (you can call ahead after 5:00pm) but we think this will allow more guests to enjoy a meal with us. Since we are so small, holding tables for reservations will limit the amount of guests we can serve. We really dislike having tables empty and guests standing at the door wanting to sit, only to turn out the reservations never show. It would also limit the ability to pop in and dine with us. If and when we expand, we will consider reservations.

Thank you again to all and we look forward to seeing you at the Village!

Our Kickstarter Campaign is live!

Welcome to our Village Sake Kickstarter Campaign!

We are excited to bring Village Sake to our amazing home town of Fairfax, California. Village Sake is a Japanese pub serving mouth-watering Japanese “izakaya" fare with finely paired sake and craft beers. Having visited izakaya throughout Japan, we’ve long known that the relaxed pub feel, fantastic sake, and succulent small dishes would be a perfect fit in Fairfax. Village Sake will become the go-to pub to finish the day after enjoying the local trails, lakes, and activities, complementing streets that are already alive with vibrant people enjoying food, music, and friends.

Executive Chef Scott Whitman’s passion for Japanese food began while opening a restaurant in Osaka, Japan. He’s travelled through Thailand, Hong Kong, Singapore, and Taiwan exploring culture and cuisine and developing his unique cooking style. He earned a Michelin Star in 2007 & 2008 and was featured at the famed James Beard House in 2010 and 2014. Now, after 15 years as executive chef at the beloved Sushi Ran in Sausalito, he is excited to bring his unique style to Village Sake.

The Village Sake Team

Village Sake has assembled a truly great team. Partnering with Chef Whitman is Scott Porter, a lifelong Fairfax resident and local firefighter with strong ties to the community. Our designer, Jim Maxwell of Architects II, helped us draw from the best elements of the classic Izakaya to develop a relaxed but refined atmosphere that exists nowhere else in Marin. Darrin Sander of Eat Drink Works brings his management and service expertise to our operation. Our team is growing, and we’re excited to get this party started.
